Motors are rated by kv .. I believe a 3600kv - 3800kv is about 'normal' for a 450 heli ..
The bigger the kv rating the more power/torque it will have and it will also draw more power from the battery.

Pinion gears work like so ..
Less teeth = Lower Rotor RPM / Less Torque Load on the motor.
More teeth = Higher Rotor RPM / Higher Torque Load on the motor.

If you want to use a Pinion with more teeth, then you should also go for a more powerfull motor to run it.

In case you haven't seen or heard of this headspeed calculator, you might find it very useful:

http://dhrc.rchomepage.com/calcAdvanced.htm

A 12T pinion is a nice mild starting point. I've used 14t and they have a tendency to make things run a little hot. I've used a 10T and it was a little too docile. I'm running 12s on two of mine with this Align motor KX850171A 430X Brushless Motor(4050KV) RCM-BL430X.

I have used the Alpha 450 motor on a LOT of 450 helis, very good and reliable:  http://www.hobbypartz.com/alpha-450--890kv--brushless-motor.html  I also use 15T on all my 450s.  I like a ton of head speed:  http://www.xheli.com/ek1-0653.html
I don't always fly a good gyro, but when I do, I prefer Vbar...Stay inverted my friends!

Pinguin is right, 11 or 12 will do, but 15 will make everyones eyes bug out and run away from you when you spool it up  :220:  Or at least that's how it works for me  :laugh25:  :laugh25:

Its what i do with my cars. people outside in the summer time. i go to my workbench with a grin. take out my car with a average gearing of 18/88, then changed it to 49/72. the motor really doesn't like it, but i get a chuckle out of it.
